A bit about myself: After college, I took up my culinary degree at the Center for Asian Culinary Studies in San Juan, Metro Manila. After that, I found myself naturally inclined toward the pastry side of cooking, so I enrolled in multiple courses in the Wilton School of Cake Decorating in Chicago. While in the U.S., I was fortunate enough to undergo rigid training while apprenticing under internationally-renowned cake decorator Colette Peters.
I chose the name Cake Couture because the term "couture" aptly describes the way in which my cakes come to fruition - I customize each cake based on my clients' whims and wishes. Each cake is one of a kind. I'm utterly amazed and frankly at the same time, challenged by the imagination of my clients. A good number of the cakes you see here are the products of simple imagination. In a way, I'm thankful to a lot of my clients for stretching the bounds of my creativity and ability.
For the cakes which are uniquely shaped, I carve them by hand as it is quite difficult to find pre-made molds. I also make the sugar flowers, toppers on the cup cakes and many of the celebration cakes by hand. My methods explain, in great part, why I opt to receive orders well ahead of the deadline.
